Gizzi Erskine shows how easy it is to create a delicious winter fudge with only four ingredients.
Home-made fudge is a favourite with young 'uns, and the odd grandparent, who like to indulge a sweet tooth. With half-term fast approaching and the damp winter evenings drawing in, this deliciously simple recipe will be sure to keep them interested, entertained and happy.
275 grams Billington's Golden Caster Sugar
100 grams Billington's Light Muscovado sugar
225 grams Clotted Cream
½ tsp Silver Spoon Cakecraft Natural Vanilla Extract
Preparation Time 10 minutes
Baking Time 15 minutes
1. Place all the ingredients in a large saucepan and heat gently, stirring until sugar dissolves. Bring to the boil, cover and boil for 3 minutes. Uncover and continue to boil until the temperature reaches 116 °C / 240 °F.
2. Remove from the heat and beat until the mixture becomes thick and creamy. Pour into a greased 20 cm (8 inch) square tin. Leave for 30 minutes. Mark into squares with a knife and leave until set. Cut into pieces and store in an airtight container
