Celebrate National Rum Day this summer with this colourful selection of rum cocktail recipes

A fresh, fruity and sweet cocktail is the perfect accompaniment to any warm, sunny evening or picnic in the park? With National Rum day falling in August, now is the perfect time to experiment with flavours and these rum-based cocktail recipes will show you how.

Blackcurrant mojito

Ingredients

  • fresh mint leaves
  • 1 shot lime juice
  • 1 tsp caster sugar
  • Crushed ice
  • 1 shot Havana Club Añejo Especial rum
  • 1 shot Supercassis Blackcurrant Liqueur
  • essential Waitrose Club Soda
  • Sprig of mint

Method

Lightly muddle the mint leaves, lime juice and sugar at the bottom of a tall glass. Add crushed ice to half fill the glass. Pour over the rum and liqueur and stir lightly. Add more ice to fill the glass and top with soda water. Garnish with the mint sprig.

 

Peach daiquiri

Ingredients

  • Crushed ice
  • 2 shots Bacardi Superior Rum
  • 1 shot lime juice
  • 2 tsp caster sugar
  • Half a peach, peeled, stoned and chopped
  • 1 peach slice

Method

Whizz the ice, rum, lime juice, sugar and chopped peach in a blender until slushy. Pour into a chilled martini glass and garnish with the peach slice.

The Rumtella

Ingredients

  • 50ml The Duppy Share
  • 2 large teaspoons Nutella
  • 2 scoops of vanilla ice-cream
  • 2 scoops of ice 

Method

Whizz all the ingredients up in a blender.Serve in an ice cream sundae glass.

The ​Sunday Roast

Ingredients 

  • 35ml Captain Morgan Original Spiced Gold (1.4 units)
  • 25ml espresso, cold  25­35ml cascara syrup, variable depending on how sweet you make it  10ml mezcal – enough to coat the glass
  • Plenty of ice
  • Twist of lemon   

Method

Add the mezcal to your glass and swirl around to coat the interior of the  glass 

Add 3 - ­4 cubes of ice 

Add the Captain Morgan, espresso, cascara syrup and stir 

Taste for sweetness 

Squeeze over a peel of lemon and drop into the cocktail 

Serve immediately
