Thai Mushroom Noodles
Ingredients
- 250g egg noodles
- 2 tbsp vegetable oil
- 4 red chilies, deseeded and chopped
- 6 spring onions chopped into 1 cm lengths
- 1 tsp sesame oil
- 240 g shitake mushrooms, destalked and chopped
- 100g mange tout, roughly chopped
- 2 tbsp soy sauce
- Fresh chopped coriander

Method
Boil the noodles in salted water according to the instructions on the packet then drain. Rinse in cold water then drain again.Heat the oils in a hot wok and stir fry the chili and spring onion for a minute. Add the mushrooms and stir fry for 2 minutes. Add the mange tout, stirring constantly, and cook for a minute. Add the noodles and stir well to mix, pouring in a couple of tbsp soy.
Toss well then empty on to a serving plate and sprinkle with coriander.
