Thai Mushroom Noodles

Ingredients

250g egg noodles
2 tbsp vegetable oil
4 red chilies, deseeded and chopped
6 spring onions chopped into 1 cm lengths
1 tsp sesame oil
240 g shitake mushrooms, destalked and chopped
100g mange tout, roughly chopped
2 tbsp soy sauce
Fresh chopped coriander

Method

Boil the noodles in salted water according to the instructions on the packet then drain. Rinse in cold water then drain again.

Heat the oils in a hot wok and stir fry the chili and spring onion for a minute. Add the mushrooms and stir fry for 2 minutes. Add the mange tout, stirring constantly, and cook for a minute. Add the noodles and stir well to mix, pouring in a couple of tbsp soy.

Toss well then empty on to a serving plate and sprinkle with coriander.
