Chili Relleno Casserole

(Yield: 6 to 8 servings)

  • 1 pound soft tofu, rinsed
  • 2 cans (7 ounces each) diced green chilies
  • 1 cup shredded Monterey jack cheese
  • 6 egg whites
  • 2 eggs 2/3 cup non-fat or low-fat milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cumin
  • 1 cup chredded Chedder cheese
  • 1 can (28 ounces) Muir Glen Organic Chunky Tomato Sauce
  • 1/4 cup chopped fresh cilantro

 

Oriental Noodle Toss

(Yield: 4 servings)

  • 1-8oz package Eden Organic Extra Fine Pasta
  • 1/2 pound snow peas, rinsed
  • 1-15oz can Eden Organic Ginger Black Beans, drained
  • 1 cup thinly sliced scallions
  • 2 tablespoons Eden Organic Shoyu
  • 1 tablespoon Eden Hot Pepper Sesame Oil
  • 2 teaspoon eden Toasted Sesame Oil
