Tasty organic desserts
Frozen Banana Parfait
(Yield: 2 servings)
- 2 large very ripe bananas, peeled, cut into 3 to 4 chunks and frozen
- 1/4 cup Edensoy or any Eden Organic food beverage Maple syrup to taste (optional)
- 1/2 cup blueberries or other diced fruit
Cut the banana chunks into slices and set in a food processor with the Edensoy. Process until thoroughly pureed. Stir in maple syrup to taste, if desires. Set a few blueberries in the bottom of two parfait glasses. Spoon about one third of the banana mixture on top. Repeat layers twice more, ending with blueberries. Serve immediately
Creamy Rice Pudding
(Yield: 6 servings)
- 1 liter Edensoy Extra Original
- 2 cups water
- 2 teaspoons vanilla
- 2 teaspoons cinnamon
- 1 teaspoon ground cardamon
- 1/4 teaspoon Lima Sea Salt
- 1/4 cup maple syrup, approximately
- 1 1/2 cups white basmati rice
- 1/2 cup raisins
In a heavy 6-quart saucepan, bring the Edensoy Extra, water, vanilla, cinnamon, cardamom, salt, and maple syrup to the boil. Add the rice and raisins and return to the boil. Lower the heat, cover and simmer until the rice is cooked, about 15 to 20 minutes. Let stand off heat for about 10 minutes. Stir well and add more maple syrup to taste, if desired. Thin with additional Edensoy Extra or water, as needed Garnish with pistachios.
